The Mango Character

Delipaste Mango delivers the warm, honeyed sweetness of fully ripe mango — tropical, floral and lush, with that distinctive depth that separates great mango flavour from a pale imitation. The golden colour of the paste carries through into the finished gelato, giving the product an appetising, vibrant appearance that signals the flavour before the first taste.

Dosage

Mix 70–100g per litre of prepared white gelato base. Start at 70g for a balanced, present mango flavour and increase to 100g for a more intense, forward tropical character. For sorbet applications, the higher end of the dosage range delivers the bold flavour profile that works best without a dairy base to round it. For pastry and confectionery, adjust to taste.

Storage Store in a cool, dry place away from direct heat and sunlight. Keep sealed between uses.
