Focaccia Bread

Focaccia is a flat oven-baked Italian bread similar in style and texture to pizza; in some places, it is called “pizza bianca”. Focaccia can be served as a side dish or as sandwich bread. Try our recipe and share your creation with us @masterbakerstudio and do not forget to use #studiocircle.


  • 1 Put the flour in mixing bowl, make a deepening in the flour and add Sugar, Dry Yeast and water.
  • 2 Leave it covered for 30 minutes at room temperature.
  • 3 Add Olive Oil and Salt to the bowl and mix with your hand mixer or kitchen machine for about 10 minutes on medium speed until the dough gets smooth and the gluten structure is well developed.
  • 4 Rest the dough in the bowl for 60 minutes, cover the bowl with a kitchen cloth
  • 5 Cut the dough in two similar sized pieces, fold the dough several times from the outside to the middle until you get a bit of tension to your dough.
  • 6 Prepare a baking tray with baking paper, put your dough with the folded side down on the baking tray, the nice surface should be up.
  • 7 Cover the dough and proof for at least 30 minutes.
  • 8 Prep your oven - heat up your oven to 220° C
  • 9 Brush the dough surface with olive oil and make few deepening all over the surface with your fingertips. Season it with coarse salt, rosemary
  • 10 Start with 220 °C and decrease to 200° C after 5min
  • 11 Bake in total for about 15 - 20 min. until golden brown!


  • 1 500g Schapfen Wheat Flour T55
  • 2 8g Dry Yeast
  • 3 10g Salt
  • 4 5g Sugar
  • 5 350g Water (Luke-Warm)
  • 6 25g Olive Oil
